  • 1/4 c diced onion
  • 1/3 c recipe crumbles
  • 1/3 c thawed chopped frozen spinach (drain well, then press remaining water from)
  • 1/4 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. spike seasoning
  • vegetable oil spray
  • 12 eggs
  • 3/4 c grated Monterey Jack cheese

SAUTÉ ONIONS OVER MEDIUM HEAT UNTIL SLIGHTLY TENDER, BUT STILL FIRM. ADD RECIPE CRUMBLES AND SPINACH. STIR GENTLY. COMBINE GARLIC POWDER, ONION POWDER AND SPIKE SEASONING AND AD TO SPINACH MIXTURE. SIMMER, UNCOVERED FOR 5 MIN. KEEP WARM

IN A SEPARATE SAUTÉ PAN, COAT WITH VEGETABLE OIL SPRAY. PRE-HEAT PAN TO MEDIUM. ADD 2 HEAPING TBLS OF SPINACH MIXTURE PER PERSON. ADD EGGS. SCRAMBLE KEEPING EGGS MOVING UNTIL SET. REMOVE FROM HEAT AND ADD CHEESE, COVER IMMEDIATELY UNTIL CHEESE IS PARTLY MELTED.

* Recipe crumbles are a delicious soy based meat replacement for ground meat. It is made by Morning Star Farms and is found in the frozen section for your grocer or health food store.
